It's food that scientists have altered by inserting genes from one species into the cells of another species. The genes trigger a specific trait. For example, experts at the Golden Rice Project modify rice by adding a gene that produces vitamin A. Scientists don't just pull genes from one plant and put them into another -- it's possible to take genes from a completely different organism, such as bacteria, and insert them into the cells of a plant.
